Jack is an American original—milder and creamier than a cheddar—with a smoother, more elastic texture. Appalachian Jack is made with our Jersey milk and naturally aged sixty days or more; mild and creamy, it is a very versatile cheese.

Appalachian Mountaineer
Mountaineer was developed from a traditional mountain swiss recipe. When young, it has a buttery, moist texture. As it ages the flavor grows more assertive; the texture becomes firm and supple with small holes. Aged a minimum of ninety days with a natural, brushed rind.
